Snow Predicts Where Sake Rice Grows. Then There Is Hyogo.
Across Japan, snowfall and sake rice production correlate at 0.64 — the meltwater argument holds. The country's largest producer grows twice the runner-up on half the snow, and the reason is a single variety.
We measured the link between snow and ordinary rice and found a rank correlation of 0.65 — the snow that buries Niigata in January is the water in the paddy in June.
Sake rice is a different crop with different demands, so we ran it separately. Across the 31 prefectures where we hold snowfall figures, snowfall and sake rice production correlate at 0.64. The argument holds.
And then the number one producer breaks it.
The table that does not behave

Hyogo grows more than twice as much sake rice as Niigata on less than half the snow.
Take Hyogo out and the correlation goes up, from 0.638 to 0.657. It is not noise. It is one prefecture doing something the others are not.
What Hyogo is doing
The answer is a single variety.

Hyogo grows 18,356 tonnes of Yamada Nishiki, more than Niigata’s entire sake rice crop of every variety combined.
Yamada Nishiki is the variety most prized for ginjō brewing, and Hyogo’s inland basins — the Mino and Kato districts graded toku-A — are its historic home. Warm days, cool nights, clay soils that hold water. That combination is about soil and diurnal range, not about how much snow fell in the mountains.
Niigata’s answer is Gohyakumangoku at 78%, a variety bred there and suited to a cold, wet, snow-fed north — which is exactly the mechanism the correlation is describing.
So the two largest producers are not competing on the same axis. One is optimised for a grain; the other is optimised for water.
Why the correlation still means something
Removing the single outlier strengthens it rather than destroying it, and the rest of the table reads the way the snow argument predicts.
Niigata is 1st for snow and 2nd for sake rice. Nagano is 9th and 4th. Akita 6th and 5th. Yamagata 4th and 6th. Toyama 2nd and 9th. Four of the nine largest producers sit in the top nine for snowfall, and none of those four is famous for its soil.
The mechanism is the same one as for ordinary rice, and it is about timing rather than volume. Rice is flooded in May and June, months after winter precipitation falls. Rain runs off in days; snow waits on the mountain and releases into the growing season. Sake rice is more demanding than table rice — larger grains, a longer season, less tolerance for stress — so reliable summer water matters more, not less.
Where the argument gets weaker
Okayama is 3rd for sake rice on 152 cm, and Hiroshima 7th on 124 cm — both roughly a quarter of Niigata’s snow. Okayama splits its crop between Yamada Nishiki and Omachi, the oldest sake variety still farmed. Like Hyogo, these are prefectures competing on variety and terroir rather than water. Neither carries a snowfall rank here because each has fewer than four measured ski areas.
Toyama is 2nd for snow and 9th for sake rice, the same shape as its ordinary-rice result: the water without the land.
Ishikawa is 3rd for snow and 14th for sake rice. Snow is necessary for some producers and sufficient for none.
What this says about the sake
Nothing about quality, and we want to be plain about that. Yamada Nishiki from Hyogo and Gohyakumangoku from Niigata make different styles, and neither is the better grain.
What the data does say is that the “snow country makes sake” story is broadly true and specifically incomplete. It is true in Niigata, Akita, Yamagata, Fukui and Toyama, where the snow supplies the water. It is not the explanation in Hyogo, which is the largest producer of all and gets there another way.
If you want the version of this story that is entirely about water — the steep rivers, the soft water, and what that does to fermentation — that is a different mechanism from this one, and it is the reason Niigata’s sake tastes the way it does rather than the reason its rice grows.
What this is and is not
A correlation across 31 prefectures. Snowy prefectures are also northern, mountainous and rural, and each affects agriculture independently. We have not separated them.
Sixteen prefectures are missing because they have no ski areas and therefore no snowfall figure here — including Okayama, which is 3rd. Their absence removes several of the low-snow producers from the test, which if anything works against the correlation rather than for it.
Production, not acreage. The MAFF figures are inspected volume of brewing rice, which folds in yield and weather in the year measured. One crop year.
Our snowfall is measured at ski areas, so it represents mountain snowfall rather than snowfall on the paddies. For a meltwater argument that is arguably correct, but it is not the same measurement.
How this was measured
Sake rice: Ministry of Agriculture, Forestry and Fisheries, agricultural inspection results for brewing rice, 2024 crop, by producing region and variety, published as an Excel table. We summed to prefecture level and took each prefecture’s largest variety by volume. National total 94,735 tonnes.
Snowfall: daily snowfall summed over the last three completed seasons, divided by three, from Open-Meteo historical data on the ERA5 reanalysis, averaged across every ski area in the prefecture. Prefectures with fewer than four measured ski areas are excluded from the snowfall ranking, which is why Fukui carries a snowfall figure but no rank — it has three. Its 309 cm would place it ninth if small prefectures were included.
Correlations are Spearman rank correlations across the 31 prefectures holding both figures.
