Hokkaido Wine Is Sold on Its Temperature Swing. The Swing Is Japan's Smallest.
Yoichi's heat sum sits between Mosel and Burgundy, which is why the Pinot Noir works. Its day-night range in the ripening weeks is 6.6°C against Burgundy's 9.6 — and the axis where Japan and Europe genuinely part company is rain.
Almost every description of Hokkaido wine reaches for the same phrase: kandansa, the temperature swing. Cool climate, big day-night difference, therefore good grapes.
Half of that is right. The half that gets repeated is not.
Nine wine regions, one ruler
Averages for 2016–2025. GDD is the Winkler heat sum — degree-days above 10°C from April to October, the standard measure of whether a place can ripen grapes at all. Ripening range is the mean daily high minus daily low from 15 August to 30 September.

The swing is the one thing Yoichi does not have
Yoichi’s ripening range is 6.6°C. Burgundy’s is 9.6. Bordeaux’s is 10.2. Even Katsunuma, in warm Yamanashi, runs 7.4.
Of the nine regions here, only Jōetsu is flatter, and by a tenth of a degree. Yoichi is at the bottom of the table on the exact quality it is marketed for.
The reason is not mysterious. Yoichi is 5 m above sea level and a few kilometres from the sea, on a coast that fogs. Water moderates: the sea takes the heat out of the afternoon and puts it back overnight, and the day flattens. Big diurnal ranges come from being high and dry and away from water — which in this table means Shiojiri, at 730 m in the Kiso valley, the only Japanese site with a European range at 9.0°C.
Elevation buys the swing in Japan. Latitude does not.
What Yoichi does have is Champagne’s summer

Yoichi sits between Mosel and Burgundy on the heat sum, which is the measurement that decides whether Pinot Noir and Chardonnay can ripen without turning into jam. That is a real and unusual thing to have in Japan, and it is why the Hokkaido plantings work.
So the conclusion the marketing reaches is correct. The reason it gives for it is not the reason.
Higashikawa, in the shadow of the Daisetsuzan volcanoes where Yukikawa Brewery works, is cooler still at 1,237 — below Champagne, which puts it at the cold margin of what ripens at all. It also has Hokkaido’s better diurnal range at 8.4°C, because it is inland and 218 m up. The two Hokkaido sites are not the same climate.
The axis where Japan and Europe do not overlap is rain

Every Japanese region here gets at least twice Europe’s September rain, in the weeks when the fruit is on the vine waiting to be picked. Rain then splits skins, dilutes sugar and invites rot. It is the reason Japanese viticulture leans on trellising, bagging and disease-resistant varieties in a way European viticulture does not.
Yoichi is the driest site in Japan on this table at 782 mm through the growing season — and that is still 55% more than Burgundy. The dryness is relative, and it is doing more of the work than the swing ever did.
The man who planted in the worst square on the board
Look again at Jōetsu, where Zenbei Kawakami founded Iwanohara Vineyard in 1890.

He picked the worst site in this table on every axis at once, because it was where he lived — the family estate in the snow country above Takada. European vinifera could not survive it.
His answer was to stop importing the grape and build one. Kawakami ran 10,311 crossings and released 22 varieties, among them Muscat Bailey A, still the most widely planted red wine grape in Japan.
Then he solved the other half. Fermentation needs temperature control and Meiji Japan had no refrigeration, so he built a yukimuro — a snow store — beside the second stone cellar and packed snow around the fermentation vats. It was rebuilt in 2005 and holds about 5°C, and it is the same principle as the snow the region is otherwise trying to survive.
That is the sharpest version of a pattern this site keeps measuring. Snow is the water in the paddy in June. Here it is the refrigeration in September.
Katsunuma is not a cool-climate region
One more thing the table says plainly. Katsunuma’s heat sum is 2,188 — the highest here, well above Bordeaux’s 1,784.
Japan’s historic wine district is a hot one. Koshu, the variety it is built on, is a thick-skinned grape that tolerates humidity and ripens late. Reading Yamanashi as a cool-climate region because Japan feels northerly on a map is a mistake the numbers do not support.
Where this is weak
Climate is not wine. Soil, aspect, drainage, rootstock, clone, canopy work and the winemaker matter enormously, and none of them are in this table. Nothing here ranks anybody’s wine.
A region is not a vineyard. ERA5 runs on a 10–30 km grid, so each row is the valley rather than a slope. In Burgundy in particular, the entire point is differences between plots a few hundred metres apart, and this measurement cannot see any of them.
Ten years, and recent ones. Both continents sit on a warmed baseline, and European heat sums have moved a long way in thirty years. These figures describe now, not the climate any of these regions was planted for.
GDD is a blunt instrument. It ignores when the heat arrives, how cold the nights get, frost risk at either end, and sunshine hours. It is standard because it is comparable, not because it is complete.
The history is not ours. The 1890 founding, the 10,311 crossings, the 22 varieties and the snow store come from Iwanohara’s own account, linked above.
How this was measured
Daily mean, maximum and minimum temperature and precipitation from Open-Meteo historical data on the ERA5 reanalysis, 1 January 2016 to 31 December 2025, at coordinates from OpenStreetMap. GDD sums the positive part of (daily mean − 10°C) across 1 April to 31 October. The ripening range averages daily maximum minus daily minimum from 15 August to 30 September.
